The Recipe

Watermelon Rind Fruit Salad

Watermelon Rind Fruit Salad

  • 1/2 Melon
  • Yellow Peaches
  • Red Plums
  • Black Plums
  • Apricots
  • Apples
  • Black Berries
  • Blue Berries
  • Strawberries
  • Quantity is based on preference.

  1. Cut your water melon in half and save one half in the fridge. We'll only be using one half instead of the entire melon.
  2. With a knife, create a roster in the melon, by gently cutting through the red part of the melon until you reach the rind. Do not cut through the rind as we will be using it to serve as a bowl. Once the roster is created, your result should look like little blocks sitting in the watermelon rind.
  3. With a knife, now cut from one side of the rind to the other side, like pealing an apple with a knife, except on the inside. This will loosen the watermelon blocks you created earlier.
  4. Not the entire water melon will get loose, so after all of the blocks have come out, simply use a spoon to scrape out the rest of the water melon.
  5. Once all of the watermelon is out of the rind, rinse it out with water and continue to get rid of the red watermelon marks in the rind until you only see the green/white rind. It's okay to have soft red watermelon marks left.
  6. Then cut up the yellow peaches, red plums, black plums, apricots, apples, black berries, blue berries and strawberries into little bits and pieces. The amounts are purely subjective and you can even add other fruits to the salad.
  7. Once fruit is cut up, add everything into the watermelon rind that will serve as a bowl. Adding the watermelon itself is optional.

There you go! A delicious fruit and berry salad for a nice summer evening dinner.
